Nature’s notes, decoded

The molecules behind the notes you know

Every familiar scent and flavour has a molecular signature. Here are eight from our shelves, and the notes they bring to a formula.

  1. Lemon

    O

    Citral 95

    CAS 5392-40-5Fresh, sharp lemon

The main component of lemongrass oil, and the backbone of countless lemon accords.

  2. Spearmint

    O

    L-Carvone

    CAS 6485-40-1Sweet spearmint

Its mirror-image twin, D-carvone, smells of caraway. Same atoms, different nose.

  3. Vanilla

    OOOH

    Ethyl Vanillin

    CAS 121-32-4Rich, creamy vanilla

A close cousin of vanillin and several times stronger, so a little goes a long way.

  4. Peach

    OO

    Gamma Undecalactone Natural

    CAS 104-67-6Juicy, creamy peach

Known to generations of perfumers as ‘Aldehyde C-14’, even though it isn’t an aldehyde at all.

  5. Rose

    O

    Beta Damascone

    CAS 23726-91-2Rose, plum, blackcurrant

One of the ‘rose ketones’, named after the Damask rose, and powerful at tiny doses.

  6. Orange blossom

    OONH2

    Methyl Anthranilate

    CAS 134-20-3Orange blossom, grape

The signature note of Concord grapes, and a classic in neroli and orange-flower accords.

  7. Pear

    OO

    Hexyl Acetate

    CAS 142-92-7Fresh pear, green apple

An ester that occurs naturally in apples and pears, and brings their bite to fruity accords.

  8. Star anise

    O

    Anethole FG

    CAS 4180-23-8Sweet anise, liquorice

The defining molecule of anise, star anise and fennel, in a grade made for flavours.

Our story

Four decades of flavour & fragrance

SRS Aromatics was founded in 1984 with a simple aim: to supply high-quality raw materials to the fragrance and flavour industries at competitive prices, with an exceptional level of service. Forty years on, that aim hasn’t changed.

We’ve grown organically, built strong relationships with manufacturers around the world and earned a reputation as a reliable, trustworthy partner. Since a management buy-out in 2004 we’ve been a truly independent, family-owned business, run on good values from Beodric House in Bury St Edmunds.
